Leslies 'on the run' snack bars
Fig & dark chocolate snack bars
We all love a date, but in this recipe we decided to give them a wee break and add in a fig or two.
200 grams dried figs
140 grams sunflower seeds
50 grams oats
1 tbsp coconut oil, or walnut oil or hazelnut oil
2 tbsp dark chocolate sprinkles
1 tsp cinnamon
¼ tsp nutmeg
Pinch of salt
Dark chocolate, for topping
Soak the figs in hot water for 30-60 mins, until soft. Drain and lightly squeeze the figs to release any excess water.
Blend (in a food processor) the sunflower seeds and oats for 30 seconds approx. Add the figs, spices, chocolate sprinkles and oil and blend until it forms a ball of dough.
Line a small square tin with parchment paper. Press the dough into the tin, firmly and as evenly as possible. Place in freezer for approx. 1 hr until it has set. Remove and drizzle with the melted dark chocolate. Cut into desired size squares. Store in fridge or airtight container.
